This is the harissa you would find in a Nabeul household on any given evening. Sun-dried Beldi red chili peppers, soaked and ground slowly with whole garlic cloves, caraway seeds, coriander, and cold-pressed Tunisian olive oil. Nothing else. Nothing subtracted, nothing added.
The result is deep, warm, and full-bodied — with a heat that builds gradually and a flavour that is unmistakably Tunisian. Use it as a condiment, a cooking base, a marinade, or spread it directly onto bread with a pour of olive oil. This is how it is eaten in Cap Bon, and it needs no improvement.

Smoked. Deep. Layered.
The Berber variety begins from the same foundation as our Traditional — Beldi chilies, garlic, coriander, caraway, olive oil — but the chilies are smoked before grinding. Cold smoke, applied slowly, adds a dimension that is difficult to describe without tasting: something between earth and fire, a depth that the dried chili alone does not contain.
The result is bold and layered, with a heat that is present but never aggressive, and an aftertaste that stays long enough to be worth noticing. Excellent with anything grilled, roasted, or braised — and a natural companion to smoky dishes where you want the condiment to add to the register rather than contrast it.

Where the Traditional and Berber varieties begin with dried chilies, this one does not. Fresh red chili peppers — picked at peak ripeness from Cap Bon — give this variety a fundamentally different character: lighter, more vivid, with a heat that arrives quickly and dissolves cleanly rather than accumulating.
The same base of garlic, coriander, and caraway is present, but the fresh chili transforms everything around it. The result is a harissa that is more versatile than the others — lighter enough for fish, bright enough for dressings, immediate enough to use as a finishing sauce.
